Our products are fished from vessels equipped with satellite-linked Vessel Monitoring Systems (VMS) that track vessel movements to ensure compliance with set quotas. All VMS data is reported to CCAMLR who then issues a Catch Documentation Scheme (CDS) chain of custody document.

Chilean sea bass is an excellent fish for grilling, but the skinless fillets must be handled carefully so they don’t fall apart while cooking. You can also poach or sauté the meat but avoid heavy sauces that compete with the fish’s own full flavour.
